Shiitake Mushroom Bacon
I love how meaty shiitake mushrooms taste! They provide the perfect amount of umami to a dish. If you haven't ever given them a try, this is a perfect first recipe . It is simple and can be eaten by itself or with a lot of my other recipes. I especially love this in my Stuffed Breakfast Burrito recipe with Mung Bean Scrambled Eggs. If you are looking for a hearty breakfast and you have a little time to cook, I highly recommend planning to make the burrito.

Ingredients
- 4-5 medium to large fresh shiitake mushrooms
- 2 tsp dry minced garlic
- 2 Tbsp melted vegan butter
- 2 Tbsp liquid amino
- 1 tsp apple cider vinegar
- 1 Tbsp maple syrup
- 1.5 tsp paprika
- 1 tsp liquid smoke
- 2 tsp dry minced onion
- to taste salt & pepper

Directions
- Clean mushrooms with a dry brush. Do not saturate with water. Pull stem off of mushrooms and cut into thin slices
- Mix all other marinade ingredients together in a bowl
- Add mushrooms to the bowl and mix until the mushrooms are evenly coated with the marinade. Let sit for 2-3 hours at room temp or in the refrigerator
- Evenly spread the mushrooms out on parchment paper. Place the paper on a baking sheet. Bake at 400 degrees Fahrenheit for 10 minutes, then flip. Cook for 5-10 more minutes or until desired crispinessÂ
