Date Syrup
This easy recipe is so good, but you will need to start it the day before you need it. If you have the patience to try this, you probably won't ever buy date syrup from the store again. To successfully make this recipe, I recommend using a fine mesh stainless steal strainer.

Ingredients
- 18-20 dates, pit removed
- 4-5 cups water

Directions
- Place dates in a bowl
- Cover dates with 2 cups of water and soak overnight in the refrigerator
- Pour the dates and the soaking water into a pot. Add 2-3 more cups of water. Cook until the dates break down (about one hour)
- Strain dates over a bowl using a fine-mesh stainless steel strainer to collect the date water
- Add date water back to the pot and cook on low-medium heat until the date water thickens into a syrup. The longer you cook, the thicker the syrup will be. Take your time and stir frequently
- Enjoy as an ice cream topping, a dessert topping, or use as you would use date syrup in any recipe. Store in the refrigerator
