Shopping ListÂ
- cauliflower rice
- sushi nori
- thinly sliced cucumber
- thinly sliced red bell pepper
- sliced mango
- sliced avocado
‍Jerk Jackfruit
- 1 x 14 oz can young green jackfruit
- 1 Tbsp lime juice
- 1/4 cup coconut amino
- 2 Tbsp olive oil
- 2 tsp raw agave
- 1/2 Tbsp jerk seasoning
- salt & pepper to taste
‍Dipping Sauce
- 1/4 cup coconut amino
- 2 tsp lime juice

Directions
- Strain and rinse jackfruit, then press out water. Smash the jackfruit to the desired texture and place it on the side
- Mix all other ingredients for the Jerk Jackfruit in a bowl. Add the jackfruit and allow it to marinate for 2-4 hours. The longer, the better
- Dehydrate jackfruit at 110 degrees Fahrenheit for 5-6 hours
- Lay sushi nori on a cutting board or use a sushi roller. Add a layer of cauliflower rice on the nori. Place slices of cucumber, red pepper, mango, avocado, and a thin layer of Jerk Jackfruit on the cauliflower rice. Roll the sushi and slice it into pieces
- Mix coconut amino and lime juice for a simple dipping sauce
‍TipsUse a very sharp, clean knife to cut the sushi. Wipe the blade between slices.If using thawed from frozen cauliflower rice, do not allow the cauliflower rice to sit on the nori too long before rolling. You want to roll the sushi before the nori absorbs moisture.
