Buffalo Mushrooms Sliders

This recipe is simple but delicious. It uses oyster mushrooms to create a meaty filling for sliders.

Shopping List 

Ingredients:

  • Oyster mushrooms
  • 1 Tbsp stone ground mustard or mustard
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp mustard powder (Optional)

Sauce:

  • 1 cup Buffalo Sauce
  • 1 tsp of tapioca flour (Optional for thicker sauce)

Wet Batter:

  • 1 cup of flour
  • 1/2 cup of arrowroot or cornstarch
  • 1 tsp of onion powder
  • 1 tsp of garlic powder

Dry Batter:

  • 1 cup of flour
  • 1 cup of panko
  • 1 tsp onion powder
  • 1 tsp of garlic powder
  • salt to taste

Additional Ingredients:

  • 1 pack of plant-based rolls
  • Ribboned cucumbers or slices of cucumbers
  • Dill pickles
  • Sliced sweet peppers
  • vegan ranch or sauce of choice

Directions

  • Prepare the mushrooms and remove the stems. Add them to a bowl and massage the mustard, garlic, and onion powder into them. Move to the side.
  • Create wet and dry batter. Add mushrooms to wet and dry batter: Fry or air fry.
  • Add 1 tbsp of water to tapioca flour and mix. Add buffalo sauce and tapioca slurry to a saucepan mix and cook on low for 5 minutes or until the sauce thickens. Do not overcook. Toss mushrooms in sauce.
  • Cook fries and build sliders with pickles, sweet peppers, mushrooms, ranch, and cucumbers on rolls. Enjoy
