Chicago Style Popcorn puts a smile on my face every time!

Check the ViBES! This week was hard losing our dog, Peewee. He was my ride-or-die and was with me through good and evil. In almost every video I filmed over the last 5 years, Peewee was right there with me, soaking up the sun or waiting for the crumbs to hit the floor. I will never forget and see him on the other side. So, I spent some good time in the MidWest—the suburbs of Chicago. Garrett Popcorn is a place in Chicago, and they are world-famous for their cheddar and caramel popcorn mix. I mean, I could eat an entire tin by myself. Over 8 years since I have had Garrett's Chicago mix, I decided to make my own. There are some steps to this, but I promise it is yummy!

Shopping List 

Cheese Powder:

  • Four dehydrated carrots (For color and a bit of sweetness)(Optional)
  • 1/2 cup of nutritional yeast
  • 1 tsp smoked paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp ground turmeric
  • 2 tsp chili powder
  • Salt to taste

Vegan Caramel Sauce:

  • 1/2 cup of brown rice syrup
  • 1/4 cups of avocado oil
  • 1/4 cup of coconut palm sugar
  • 1/4 tsp vanilla extract  

Directions

  • Make popcorn. Spilt the popcorn into two bowls and set it to the side.
  • Blend nutritional yeast, cashews, smoked paprika, onion powder, garlic powder, ground turmeric, chili powder, two carrots, and salt. Set to the side.
  • Blend two carrots with avocado oil and strain. This will add color and a bit of sweetness. Add some avocado oil to half the popcorn in its bowl mix, then add some cheese powder. Mix and place on the side
  • Cook on low brown rice syrup, avocado oil, coconut palm sugar, and vanilla extract. Once you see the sauce covered in bubbles, stop and remove it from the heat. Pour on the other half of the popcorn and mix. Place on a baking sheet to allow it to cool.
  • Combine the cheese popcorn with the caramel popcorn, and enjoy!
