Raw Pecan Carrot Lettuce Wraps

Shopping List
Pecan Carrot Grounds
- 1 cup raw pecans (soak 2-4 hours)
- 8 sun dried tomatoes (rehydrate in water 2-4 hours)
- 1 cup chopped carrots
- 1 Tbsp chopped leek (or onion)
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp minced garlic
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 2 tsp lime juice
Red Pepper Cashew Sauce
- 1 cup raw cashews (soak 1-2 hours)
- 1 chopped red bell pepper
- 1/4 cup gently packed cilantro
- 2 Tbsp lemon juice
- 2 tsp red pepper flakes
- 2 tsp nutritional yeast
- 1 tsp minced garlic
- 1.5 tsp salt
- 1 tsp black pepper
Additional Ingredients
- lettuce (butter OR romaine work well)
- crushed dehydrated kale chips
- raw / sprouted seeds
Directions
- Combine Pecan Carrot Ground ingredients in a food processor until preferred texture
- Combine Red Pepper Cashew Sauce ingredients in a blender until you have a smooth, creamy sauce
- Build your tacos! I like to top these with crushed kale chips and/or seeds
