Raw Pecan Carrot Lettuce Wraps

Shopping List 

Pecan Carrot Grounds

  • 1 cup raw pecans (soak 2-4 hours)
  • 8 sun dried tomatoes (rehydrate in water 2-4 hours)
  • 1 cup chopped carrots
  • 1 Tbsp chopped leek (or onion)
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 2 tsp lime juice

Red Pepper Cashew Sauce

  • 1 cup raw cashews (soak 1-2 hours)
  • 1 chopped red bell pepper
  • 1/4 cup gently packed cilantro
  • 2 Tbsp lemon juice
  • 2 tsp red pepper flakes
  • 2 tsp nutritional yeast
  • 1 tsp minced garlic
  • 1.5 tsp salt
  • 1 tsp black pepper

Additional Ingredients

  • lettuce (butter OR romaine work well)
  • crushed dehydrated kale chips
  • raw / sprouted seeds

Directions

  • Combine Pecan Carrot Ground ingredients in a food processor until preferred texture
  • Combine Red Pepper Cashew Sauce ingredients in a blender until you have a smooth, creamy sauce
  • Build your tacos! I like to top these with crushed kale chips and/or seeds
