Walnut Lettuce Wraps with Orange Cashew Sauce
I am wrapping up my 3-day raw vegan reset. These tacos helped me fly past day two with no stress. These basic tacos will satisfy you on your raw vegan days with no problem. The Orange Bell Pepper Cashew Sauce is out of this world. So much flavor and creamy. No need for vegan mayo for this recipe. Tomorrow I am back to eating cooked food, but I will be making these again next month we do our next raw vegan reset.

Shopping ListÂ
Raw Walnut Meat
- 1 cup of soaked walnuts (Soak for 2-4 hours. If can soak overnight)
- 1/4 cup sun-dried tomatoes
- 1/4 cup chopped onion
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp minced garlic
- 1/2 tsp crushed red pepper flakes
- 1 tsp Himalayan salt
- 2 tsp lime

Orange Pepper Cashew Sauce
- 1 chopped orange bell pepper
- 1 cup soaked cashews
- 25 -30 cilantro leaves
- 2 Tbsp lemon
- 2 tsp crushed red peppers
- 2 tsp of nutritional yeast
- 1 tsp of minced garlic
- 1.5 tsp Himalayan salt
- 1 tsp black pepper

Other Ingredients
- Lettuce
- Crushed Nacho Kale Chips (Topping)
Directions
- Blend all the Orange Pepper Cashew Sauce ingredients until you have a smooth, creamy sauce.
- Mix all of your walnut ingredients in a food processor.
- Build your tacos!
