Walnut Pie

My favorite childhood memories include the smell of pie. If you know the vibe, go ahead and fill your kitchen with this wonderful smell. Enjoy!

Shopping List 

Ingredients

  • 1.5 cups raw walnuts, divided
  • 1 cup maple syrup
  • 3/4 cup brown coconut sugar
  • 1/4 cup tapioca starch
  • 2/3 cup vegan butter
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 Tbsp unsulphured molasses
  • 1 x 9 inch pie crust
  • vegan vanilla ice cream
  • Melted Chocolate

Directions

  • Soak 3/4 cup of walnuts for at least 2 hours in hot water (or overnight in the refrigerator), then drain.
  • If using a frozen crust, set the pie crust out to thaw to room temperature.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Bake the pie crust at 375 for 10-12 minutes, then remove it from the heat and allow it to cool. Lower the temperature of the oven to 360 degrees Fahrenheit.
  • While the crust is baking, blend together maple syrup, brown coconut sugar, tapioca starch, butter, cinnamon, vanilla extract, molasses, and soaked walnuts in a food processor. Blend the filling until it is very smooth.
  • Pour the pie filling into the pie crust and cover the top of the pie with the remaining walnuts (you may have some left over, based on how you lay them out on the pie).
  • Bake for 20-25 minutes or until the pie crust edges are golden brown. Drizzle melted chocolate onto it.
  • Allow the pie to cool to room temperature before diving in. Enjoy it alone or with vegan vanilla ice cream!
