Avocado Chocolate Chip Cookies

Avocados are so incredible and can be used in so many ways. Replacing butter with avocados for baking is dope. It also adds some healthy fats and fiber to the recipe. I used spelt flour for this recipe, which makes a dense but soft cookie. You can always use a different flour. These cookies are very soft and not too sweet, with a nice balance of flavors. If you like a sweeter cookie, you can use extra brown sugar in place of the coconut sugar.

Ingredients

  • 2.25 cups spelt flour
  • 1 tsp baking soda
  • to taste salt
  • 1 tsp cornstarch
  • 1 cup mashed avocados (2-3 medium sized)
  • 1/2 cup date syrup
  • 2 flaxseed eggs (see step 1)
  • 2 tsp pure vanilla extract
  • 1/2 cup coconut sugar
  • 1/2 cup brown sugar
  • 2 cups vegan chocolate chips

Directions

  • Preheat oven to 360 degrees Fahrenheit
  • Prepare the flaxseed eggs by combining 2 tablespoons of flaxseed meal with 6 tablespoons of water. Set aside for 10-15 minutes
  • Mix spelt flour, baking soda, salt, and cornstarch in a bowl and place to the side
  • Add avocados, date syrup, flaxseed eggs, vanilla extract, coconut sugar, and brown sugar to a blender. Blend until smooth
  • Mix dry ingredients with wet ingredients in a bowl then stir in the chocolate chips
  • Bake the cookies on a baking sheet for 18 - 20 minutes at 360 degrees Fahrenheit (bake time for sea level)
  • Allow the cookies to cool slightly on the baking sheet then transfer to a cooling rack.
