Peaches & Coconut Cream Cobbler Ice Cream

The title of this recipe says it all. Peaches. Coconut Cream. Cobbler. Ice Cream!!! I'm making this recipe all season. Peach season lasts from May to August in the US, and I can't wait to make some more fun dishes with these juicy stone fruits. This simple recipe has all the right flavors and a nice crunchy texture from the pecans!

Shopping List 

Ingredients

  • 2 + 1/4 cups chopped peaches (3 - 4 small peaches)
  • 2 + 1/4 cups coconut cream
  • 1/4 cup agave syrup

Mix-Ins / Toppings

  • chopped toasted pecans
  • chopped peaches
  • chopped graham crackers
  • date syrup

Directions

  • Peel the skin off the peaches and chop into cubes
  • Add peaches, coconut cream, and agave to a blender. Blend until smooth 
  • Follow the steps for your ice cream maker to create the ice cream. Mix in pecans, peaches, and graham crackers. If you don’t have an ice cream maker, add the liquid to a bread pan, freeze it for about 6 hours, mix in the additional ingredients, and place it back into the freezer
  • Enjoy with toppings! We won’t judge if you don’t share
