Peach Pecan Cobbler Pockets

As you know, I have used wonton wrappers in numerous ways, but using them for desserts is one of my favorite ways. Wonton wrappers make the perfect little dessert bites....Good luck eating only one. Enjoy!

Shopping List 

Ingredients

  • 5-6 fresh peaches, chopped
  • 1/3 cup brown rice syrup
  • 1/3 cup coconut sugar
  • 1/3 tsp ground cinnamon
  • 1/4 cup pecans, chopped
  • 1 pack wonton wrappers

Garnish Ingredients

  • ground cinnamon
  • sugar
  • vegan vanilla ice cream

Directions

  • Peel and chop peaches
  • Add chopped peaches, brown rice syrup, coconut sugar, cinnamon, and pecans to a saucepan and cook for 15-20 minutes on medium heat until peaches are tender. Stir frequently
  • Fill wonton wrappers with 1 Tbsp of peach filling and crimp edges
  • Deep fry or air fry until golden brown
  • Top with cinnamon and sugar. Enjoy with vegan vanilla ice cream!
