Caramel Pear 🍐 Pockets

This recipe is one of my favorites for pear season. When I made this recipe the first time, I used sweetened condensed coconut milk, but I have yet to find a good one that is not on Peta's "bad list" of suppliers. I have not tried this, but you should be able to swap the sweetened condensed coconut milk for brown rice syrup. If you try this recipe, let me know what you think.

Shopping List 

Pear Filling

  • 3-4 peeled and chopped pears
  • 1/2 cup brown sugar
  • 2 Tbsp chopped pecans
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup water
  • 2 Tbsp tapioca starch

Caramel Sauce

  • 1 x 11-12oz can sweetened condensed coconut milk OR brown rice syrup
  • 1/4 cup oat milk (omit if using brown rice syrup)

Additional Ingredients

  • 1 pack wonton wrappers

Directions

Caramel Sauce

  • Cook sweetened condensed coconut milk for about 20 minutes on low. Gently stir every few minutes
  • Allow the sauce to cool for about 2 minutes. Slowly stir in oat milk until combined and creamy. TIP: If using brown rice syrup, omit the two steps above. Just drizzle the pockets with the syrup

Pear Pockets

  • Peel and chop pears
  • Add chopped pears, brown sugar, pecans, cinnamon, nutmeg, and water to a saucepan and cook for 12-14 minutes on medium heat until pears are tender. Stir frequently
  • Add tapioca starch and stir. Cook for additional 1-2 minutes, until sauce thickens
  • Fill wonton wrappers with pear filling and crimp edges. Deep fry or air fry until golden brown
