Chocolate Strawberry Bites

Ingredients
- 16-18 chopped strawberries
- 1/2 cup brown sugar
- 1/4 tsp cinnamon
- 2 Tbsp chopped pecans
- 2 Tbsp water
- 1/4 cup tapioca starch
- 1 pack vegan wonton wrappers

Garnish Ingredients
- vegan chocolate
- powdered sugar

Directions
- Wash, dry and chop strawberries
- Add strawberries, brown sugar, cinnamon, pecans and water to a saucepan. Cook for 12-14 minutes on medium heatĀ
- Allow the mixture to cool for 2 minutes then add tapioca starch slowly while you whisk. Add more tapioca if the filling is not thickeningĀ
- Wet the edges of the wonton wrappers as you are ready to fill them. This will help them stick together. Fill wonton wrappers with strawberry filling (about 1 Tbsp each). Fold the wrapper over and seal the edges well by crimping with a fork
- Quickly deep fry until golden brown and crispy
- Drizzle with melted chocolate and sprinkle with powdered sugar.
