Jerk Lion's Mane Wonton Tacos
Are you looking for a delicious appetizer to share with friends and family? You have to try this spin on wonton tacos. These tacos are topped with fresh mango salsa and a little spicy sauce. The combination of crunchy, savory, and a little heat will have you wanting more. The show's star is, of course, Lion's Mane mushroom. Lion's Mane absorbs all the flavors from the jerk marinade and is perfect as a meat substitute for this appetizer.

Ingredients
- 7-8oz Lion's Mane mushroom
Jerk Marinade
- 1 finely chopped scotch bonnet OR habanero pepper (deseeded)
- 1 Tbsp + 1.5 tsp brown sugar
- 1/2 tsp cinnamon
- 2 tsp lime juice
- 1/4 cup coconut aminos
- 2 Tbsp coconut oil (melted)
- 2 Tbsp Jamaican jerk seasoning
- 1 tsp minced garlic
- 1/2 tsp dried parsley
- to taste salt & pepper
Mango Salsa
- 1 finely chopped mango
- 1/2 cup finely chopped red bell pepper
- 2 Tbsp lime juice
- 1/2 cup finely chopped red onion
- 1/4 cup finely chopped cilantro
- to taste salt & pepper
Additional Ingredients
- fresh thyme
- oil spray
- wonton wrappers
- jalapeño sauce OR sauce of choice
Directions
- If using a Spray & Grow kit, harvest, remove any substrate, and brush off any particles from the Lion's Mane mushroom
- Chop the ingredients for the mango salsa then combine them in a bowl. Set aside
- Add Lion's Mane to a pan (preferably cast iron) on medium heat. No oil necessary. Cook and press, using a heavy pan or cast iron press, until all the water is cooked out. Flip a few times during this process
- Combine all ingredients for the jerk marinade in a bowl or glass container with a lid. Add the Lion's Mane to the container with the marinade. Flip to coat well, close the container, and allow the mushroom to marinate for 1 - 2 hours
- Preheat oven to 370 degrees Fahrenheit
- Add marinated Lion's Mane back to the pan and cook on medium heat for 3 - 4 minutes on each side. Baste the mushroom with the extra jerk marinade and sprinkle in some fresh thyme leaves. When ready to serve, slice into small pieces for tacos
- Time to make the wonton taco shells: Lightly spray each wonton shell with oil, on both sides. Then drape the wrapper over the edge of a baking dish with two of the corners facing down. Bake the wrappers, draped over the dish, for 4 - 5 minutes
- Build your tacos with the wonton shells, jerk Lion's Mane, mango salsa, and sauce of choice.
