Loaded Waffle Fries w/ Chipotle Cheese Sauce
This has to be one of my favorite vegan cheese sauces. Easy but delicious. 🤤

Shopping List
Ingredients
- 1 & 1/2 cups raw cashews (soak for 1-2 hours)
- 1/2 cup nutritional yeast
- 1/4 tsp tumeric
- 1 tsp granulated garlic
- 1 tsp salt
- 1 & 1/4 cups vegetable broth
- 1/4 tsp tapioca starch
- 2 tsp rice vinegar
- 2 Tbsp adobo sauce from canned chipotle peppers
- waffle fries
Garnish Ingredients
- black beans
- chopped red bell pepper
- chopped green onion
Directions
- Soak cashews for 1-2 hours in warm water, then drain
- Blend cashews, nutritional yeast, turmeric, garlic, salt, vegetable broth, tapioca, rice vinegar, and adobo sauce for 4-5 minutes or until very smooth. TIP: This cheese sauce will be smoother if you can use a high speed blender
- Prepare waffle fries. Top with black beans (prepared as you wish), chopped red bell peppers, chipotle cheese sauce, and green onions.
