Loaded Waffle Fries w/ Chipotle Cheese Sauce

This has to be one of my favorite vegan cheese sauces. Easy but delicious. 🤤

Shopping List 

Ingredients

  • 1 & 1/2 cups raw cashews (soak for 1-2 hours)
  • 1/2 cup nutritional yeast
  • 1/4 tsp tumeric
  • 1 tsp granulated garlic
  • 1 tsp salt
  • 1 & 1/4 cups vegetable broth
  • 1/4 tsp tapioca starch
  • 2 tsp rice vinegar
  • 2 Tbsp adobo sauce from canned chipotle peppers
  • waffle fries

Garnish Ingredients

  • black beans
  • chopped red bell pepper
  • chopped green onion

Directions

  • Soak cashews for 1-2 hours in warm water, then drain
  • Blend cashews, nutritional yeast, turmeric, garlic, salt, vegetable broth, tapioca, rice vinegar, and adobo sauce for 4-5 minutes or until very smooth. TIP: This cheese sauce will be smoother if you can use a high speed blender
  • Prepare waffle fries. Top with black beans (prepared as you wish), chopped red bell peppers, chipotle cheese sauce, and green onions.
