Walnut Black Bean Burger
- 2.5 cups shelled raw walnuts
- 1 x 15oz can black beans
- 1/2 white onion, roughly chopped
- 3 Tbsp diced chipotle peppers in adobo
- 1/4 cup refined coconut oil
- 1.5 tsp granulated garlic
- 1 tsp smoked paprika
- 1.5 tsp chili powder
- 1 tsp black pepper
- 1 tsp salt
- 1 Tbsp vegan Worcestershire
- 3 Tbsp tapioca starch
- 1 cup panko bread crumbs
Garnish Ingredients
- burger buns OR lettuce
- vegan mayonnaise
- vegan sliced cheese
- sliced pickles
- sliced red onion
- sliced bell pepper(s)
Directions
- Soak walnuts for at least 2 hours in hot water (or overnight in the refrigerator), then drain
- Preheat oven to 350 degrees Fahrenheit
- Drain and rinse black beans then spread black beans out on a baking sheet lined with parchment paper. Bake for 10-12 minutes to dry the beans
- Combine black beans, walnuts, onion, chipotle peppers in adobo, coconut oil, garlic, paprika, chili powder, black pepper, salt, Worcestershire sauce, tapioca starch, and panko bread crumbs in large food processor
- Pulse bean walnut mixture until well combined, scrapping the sides as you go
- Form mixture into patties & place in freezer for at least 1 hour
- In a sauté pan, cook the burgers with a small amount of oil, until browned on both sides
- Stack burger with your favorite garnish ingredients and enjoy!
