Parsnip Sandwich w/ Roasted Red Bell Pepper Spread
Once I made my first dish with turnips, the next step was to experiment with parsnips! When eaten raw, people say that parsnips have a peppery, nutty flavor. When cooked, I think they taste a little sweet. For this recipe, I marinated the parsnips and thinly sliced them with a mandolin. Almost looks like lunch meat, right?

Parsnip Marinade
- 2 parsnips
- 2 Tbsp olive oil
- 1/2 tsp smoked paprika
- 1 tsp minced garlic
- 1 tsp maple syrup
- 1 tsp apple cider vinegar
- to taste salt & pepper

Roasted Red Bell Pepper Spread
- 1/2 cup vegan feta cheese
- 1/4 cup roasted red bell peppers
‍
Garnish Ingredients
- sandwich bread
- yellow bell pepper
- arugula
- vegan mayonnaise

Directions
- Thinly slice parsnips (a mandolin works well, just be careful!) Place them to the side in a baking sheet or long dish. TIP: You want a dish that will allow you to cover the parsnips with marinade
- Combine marinade ingredients and pour marinade over the parsnipsÂ
- Combine roasted red pepper spread ingredients in a blender or food processor. Mix until you have a creamy texture
- Slice your sandwich ingredients and set aside
- Air fry or grill the parsnip slices for 3-4 minutes. You do not want to overcook. The goal is to keep them fresh and crispy
- Toast your bread, if preferred. Build your sandwich and enjoy!
