Gallo Pinto
I grew up on dishes that consisted of beans and rice as staple ingredients, but the beans and rice in Costa Rica hits different. Gallo Pinto consists of beans, rice, onions, spices, and herbs. Another crucial ingredient for Costa Rican vibes is Lizano Salsa. We became very familiar with this dish while visiting Costa Rica and wanted to make it at home. My recipe below is not authentic, but it tastes amazing!

Ingredients
- 3 cups brown rice
- 1-2 Tbsp grapeseed OR avocado oil
- 1 Tbsp minced garlic
- 1/2 chopped white onion
- 4 cups canned black beans
- 1/2 cup vegetable broth
- to taste salt & pepper
- 1 chopped red bell pepper
- 1/2 cup Lizano Salsa

Directions
- Cook rice. Set aside
- Sauté garlic and onions in oil until lightly browned
- To the pan, add drained & rinsed black beans, vegetable broth, and salt & pepper. Cover with a lid and cook for 10-15 minutes on medium heat
- To the pan, add Lizano Salsa and red bell pepper. Cover with a lid and cook for 6-8 minutes on low heat
- Add cooked rice to the pan and mix all ingredients together. Simmer until the liquid is cooked down
- Enjoy with steamed mixed veggies and plantains for Costa Rican vibes!
