Harissa Agave Pockets

Shopping List 

Ingredients

  • 2 cans young green jackfruit

Harissa Marinade

  • 2 Tbsp grapeseed OR avocado oil
  • 2 Tbsp lime juice
  • 1 Tbsp + 2 tsp harissa powder OR harissa paste
  • 3 Tbsp agave
  • 1/4 cup liquid amino
  • 2 tsp minced garlic
  • to taste salt

Additional Ingredients

  • caramelized onions
  • sliced jalapenos
  • cooked wild rice
  • vegan cheese shreds
  • garlic aioli OR sauce of choice
  • vegan puff pastry dough

Directions

  • Drain the jackfruit and squeeze as much water out as you can. Use your hands to pull apart jackfruit to resemble pulled pork. Place jackfruit in the oven and roast in a pan at 380 degrees Fahrenheit for 20 minutes. This will dry the jackfruit and help create a more meat-like texture
  • Mix together all Harissa Marinade ingredients in a bowl then pour the marinade over the jackfruit. Marinate for at least 2 hours. Prep additional ingredients while you wait
  • Smoke or roast the marinated jackfruit in the pan for 15-20 minutes at 380 degrees Fahrenheit. Make sure to move the jackfruit around so all parts cook evenly
  • Build your pockets by cutting out rectangles of pastry puff dough. Place caramelized onions, slice jalapenos, cooked wild rice, vegan cheese shreds and jackfruit in the center of one side of dough. Fold over the dough and seal the edges with water. Crimp edges with a fork. Follow the directions for baking the pastry
  • Enjoy with your favorite sauce! I made a quick roasted garlic aioli for this.
