Raw Avocado Jalapeno Pasta

It is hard to deny that you feel good when you eat well. I am far from perfect when it comes to eating, but I always try to do better. This is why I eat mindfully at least three days each month. If you are ever interested in raw vegan food, this recipe is a delicious one.

Shopping List 

Ingredients

  • 2-3 large daikon radish (or jicama)

Avocado Jalapeno Sauce

  • 3 small avocados
  • 1/2 cup raw sunflower seeds
  • 1/4 cup raw hemp seeds
  • 3 Tbsp lime juice
  • 2 deseeded jalapenos
  • 1 Tbsp raw agave
  • 2 tsp minced garlic
  • 1 cup water
  • small handful fresh cilantro
  • to taste salt

Garnish Ingredients

  • pomegranate seeds
  • red pepper flakes

Directions

  • Clean and peel the daikon radish and cut it into sizes that fit your spiralizer. The longer, the better
  • Spiralize the daikon and place it in a bowl to the side
  • Add all ingredients for the avocado jalapeno sauce to a blender and blend until you have a smooth texture
  • Pour sauce onto daikon radish pasta and stir to coat. Serve garnished with red pepper flakes and pomegranate seeds
