Raw Avocado Jalapeno Pasta
It is hard to deny that you feel good when you eat well. I am far from perfect when it comes to eating, but I always try to do better. This is why I eat mindfully at least three days each month. If you are ever interested in raw vegan food, this recipe is a delicious one.

Ingredients
- 2-3 large daikon radish (or jicama)

Avocado Jalapeno Sauce
- 3 small avocados
- 1/2 cup raw sunflower seeds
- 1/4 cup raw hemp seeds
- 3 Tbsp lime juice
- 2 deseeded jalapenos
- 1 Tbsp raw agave
- 2 tsp minced garlic
- 1 cup water
- small handful fresh cilantro
- to taste salt

Garnish Ingredients
- pomegranate seeds
- red pepper flakes

Directions
- Clean and peel the daikon radish and cut it into sizes that fit your spiralizer. The longer, the better
- Spiralize the daikon and place it in a bowl to the side
- Add all ingredients for the avocado jalapeno sauce to a blender and blend until you have a smooth texture
- Pour sauce onto daikon radish pasta and stir to coat. Serve garnished with red pepper flakes and pomegranate seeds
