Roasted Red Bell Pepper Wontons w/ Lion's Mane

This recipe was added as a bonus recipe in my "It's All About the Lion's Mane" e-book. These little wonton pockets are loaded with flavor and are easy to make for a quick snack. The creamy, savory filling pairs perfectly with sweet chili sauce, so dip these for an extra tasty treat.

Shopping List 

Ingredients

  • 6oz Lion's Mane mushroom
  • 1 Tbsp olive oil
  • 1 tsp Old Bay seasoning
  • 1 tsp red pepper flakes
  • 2 Tbsp soy sauce
  • 2/3 cup vegan cream cheese
  • heaping 1/4 cup chopped white onion
  • 1/4 cup roasted red bell peppers
  • 1/3 cup vegan shredded mozzarella cheese
  • to taste salt & pepper

Additional Ingredients

  • vegan wonton wrappers
  • cooking oil spray (avocado oil works well)
  • sweet chili sauce

Directions

  • Separate Lion's Mane with your hands into small pieces
  • Cook Lion's Mane in a pan on medium heat for ten minutes. TIP: Sprinkle a little salt on the mushrooms. Press all of the water out of the Lion's Mane by placing a heavy pan or cast iron press on top of the mushrooms while cooking
  • Add 1 Tbsp of olive oil, Old Bay seasoning, red pepper flakes, soy sauce and salt & pepper to the pan. Continue to cook the Lion's Mane for five additional minutes, stir frequently
  • In a food processor, add cream cheese, onions, roasted red bell peppers, shredded cheese, salt & pepper, and seasoned Lion's Mane. Pulse until well combined
  • Get wonton wrappers & a bowl of water ready
  • Add 1 Tbsp of mixture to the middle of wonton wrapper. Lightly moisten the edges of the wrapper. Gather together the edges to form a wonton puff
  • Lightly spray with cooking oil (avocado oil works great). Air fry at 385-400 degrees Fahrenheit for 7-8 minutes, or until golden brown (check halfway through to ensure wontons do not burn)
  • Serve with dipping sauce. I enjoy sweet chili sauce with these.
