Smoky Spicy Pineapple Lion's Mane Steak
I found myself yearning for some Caribbean vibes 🏝️, so I decided to smoke some Lion's Mane mushrooms 🍄. I bathed them in my Spicy Pineapple Marinade 🌶️🍍 that doubles as a fantastic sauce. When smoking Lion's Mane, patience is key 🕰️ - it's all about allowing the flavors to fully infuse the mushroom. It made me happy to know I was making this with the intention of dropping off some to my mom for Mother's Day!

Ingredients
- 1/2 pound Lion's Mane mushroom
Spicy Pineapple Marinade
- 2 cups chopped fresh pineapple
- 3 Tbsp apple cider vinegar
- 1/4 cup agave syrup
- 1/4 cup coconut oil
- 1 whole habanero pepper
- 2 Tbsp granulated garlic
- 2 tsp granulated onion
- 1 tsp dried dill
- 1/4 cup coconut amino
- 1 handful fresh cilantro
- to taste salt & pepper
Directions
- Harvest and gently clean Lion's Mane with a brush, if needed. Keep the Lion's Mane as big as possible. Set it aside in a glass baking dish
- Blend together all marinade ingredients. Evenly coat the Lion's Mane with the marinade
- Add Lion's Mane to a smoker OR roast for 1 hour at 340 degrees Fahrenheit. Make sure to check the mushroom every 15 minutes and continue to brush with marinade to prevent drying
- Serve the smoked Lion's Mane steak with your favorite sides. I opted to eat this as a bowl, with mixed greens, coconut quinoa, grilled corn, a little extra marinade on top, and some fresh cilantro to garnish. Enjoy!
