Crunchy Yuca Fries with Chipotle Cashew Sauce

This recipe reminds me of Costa Rica. I enjoyed yuca fries almost every day for a week. It took me a few tries to fall in love, but now there is no turning back. Yuca fries will be on my house menu. I also made a delicious chipotle cashew sauce that you can use to rock with these crunchy fries. TIP: I swap vegan mayo for cashews and enjoy the creamy, nutty flavor it brings to sauces.

Shopping List 

Ingredients

  • 1-2 yuca
  • corn starch
  • frying oil
  • smoked paprika
  • to taste salt & pepper

Chipotle Cashew Sauce

  • 1 cup raw cashews
  • 2/3 cup oat OR plant milk of choice
  • 2 Tbsp fresh lime juice
  • 3 Tbsp nutritional yeast
  • 2-3 chipotle peppers in adobo sauce
  • 2 tsp minced garlic
  • 2 tsp smoked paprika
  • to taste salt

Directions

Soak cashews for 2 hours, then drain. Set aside for step 5.

  • Cut off the ends of the yuca. Cut it in half and remove any brown parts. Peel the double layer off the root until you have an all-white root. Carefully remove the root in the middle with a knife. Cut into fry sized pieces
  • Rinse the yuca in fresh water then boil in water for about 10 minutes or until the root is soft (Do not overcook or the fries will be too soggy)
  • Set yuca fries on a paper towel to dry. Coat with cornstarch to add an extra crunch
  • Heat the frying oil to 375 degrees Fahrenheit. Fry yuca until golden crispy. Sprinkle fries with paprika, salt & pepper
  • Chipotle Cashew Sauce - Add all chipotle cashew sauce ingredients to a high-power blender and blend until you have a smooth texture
  • Dip fries into the sauce
