Soul Bowl

Every once in a while I get meal prep recipe requests. If you are looking for a great meal prep option, this is definitely one of my favorites.

Shopping List 

Ingredients

  • 2-3 sweet potatoes
  • 1-2 Tbsp olive oil
  • to taste salt & pepper
  • 1/2 tsp smoked paprika
  • black eyed peas
  • rice of choice (I prefer forbidden rice)
  • 1 tsp minced garlic
  • vegan butter
  • 2 bunches collard greens, chopped
  • 1/4 cup liquid amino
  • BBQ sauce OR preferred sauce
  • crispy onions (optional)

Directions

  • Dice sweet potatoes and toss to coat with olive oil, salt & pepper, and smoked paprika. Bake or air-fry until cooked
  • While the sweet potatoes are cooking, cook black-eyed peas and rice. Set aside. TIP: If you prefer to use dried black-eyed peas, be sure to start the recipe in advance so you can soak them for at least 6 hours
  • Sauté garlic and chopped collard greens in vegan butter for 6-8 minutes. Add liquid amino to the greens and cook for an additional 2-3 minutes. Set aside
  • Build your soul bowl with sweet potatoes, black-eyed peas, rice, and greens. Top with BBQ sauce or sauce of choice. I also like to add a few crispy onions right before eating, for an added crunch.
