Lion's Mane Pulled No-Pork Sandwich
When I first went vegan, I typically used jackfruit when I wanted to make pulled "pork", but this sandwich is elevated with Lion's Mane. I love to crisp up the Lion's Mane in the oven and then coat it with the sauce for the perfect texture. Hope you enjoy!

Shopping List
Sauce Ingredients
- 1/2 cup BBQ sauce
- 1 Tbsp olive oil
- 1 tsp tapioca starch
- 2 Tbsp chopped green onion
- 1/2 finely chopped red bell pepper
Broccoli Coleslaw
- 2 cups broccoli coleslaw mix
- 3 Tbsp vegan mayonnaise
- 1 tsp lemon juice
- 1 tsp red wine vinegar
- 1/2 tsp sugar
- to taste salt & pepper
Additional Ingredients
- 1/4 pound Lion's Mane mushroom
- 2 pretzel OR burger buns
- crispy onions OR jalapeños
- to taste salt & pepper
Directions
- Preheat oven to 370 degrees Fahrenheit
- Pull apart Lion's Mane into small pieces that resemble shredded meat
- Add Lion's Mane to a grill/sauté pan with a pinch of salt & pepper
- Cook on low for 10-15 minutes to release all of the water
- Line a baking dish with parchment paper and place the Lion's Mane evenly onto the paper
- Bake at 370 degrees Fahrenheit until the pieces of mushroom begin to crisp (toss frequently to avoid burning)
- While Lion's Mane is in the oven, mix together Broccoli Coleslaw ingredients and set aside
- Mix Sauce ingredients together in a bowl
- Stir the Lion's Mane into the sauce and put it back in the oven for another 10 minutes
- Build your sandwich and enjoy!
