Extra Crispy Cajun Mushroom Sandwich
In my younger years, and before my vegan journey, I spent far too many nights partying in Palm Springs, only to find myself grabbing a Big Chicken Sandwich at Jack In The Box. I wanted to remake that sandwich, but of course, vegan and even better than I remember. This recipe will blow your mind! Get ready.

Shopping List
Ingredients
- 8-10oz Lion's Mane mushroom
- minced onion
- minced garlic
- salt & pepper
Wet Batter
- 1 cup spelt flour
- 2/3-1 cup sparkling water
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- to taste salt & pepper
- 2 Tbsp tapioca starch (optional)
Dry Batter
- 1/2 cup spelt flour
- 1 cup panko bread crumbs
- 2 tsp minced onion
- 2 tsp minced garlic
- 2 tsp cajun seasoning
- 1 tsp Italian seasoning
Garnish Ingredients
- burger buns
- lettuce
- sliced red onion
- vegan mayonnaise OR preferred sauce
Directions
- Clean Lion's Mane mushroom with a brush, if needed, and split into 2-2.5oz pieces
- In a cast iron pan (preferably), cook the Lion's Mane on medium. Cook for 2-3 minutes on each side, without oil, using a cast iron press to cook out the water & create a patty shape. Once you have a flat shape, sprinkle with minced onion, minced garlic, and slat & pepper. Set aside
- Mix together ingredients for wet batter
- Mix together ingredients for dry batter
- Dip the Lion's Mane patties into wet batter and then dry batter
- Deep fry or air fry patties, at 370 degrees Fahrenheit, until golden brown and crispy (I prefer to deep fry with grapeseed oil)
- Build your sandwich with preferred garnish ingredients. I loved this sandwich with a pretzel bun and you know I doubled up the patty!
