Adobo-Style Lion's Mane & Turnip Grounds

I want to introduce different methods to create vegan meat substitutes. I don't know why I didn't create this sooner. Lion's mane mushroom & turnips! Well, I do go by Turnip, so I should make more turnip recipes. The texture of this recipe isn't as meaty as some of my other meat substitutes, but the flavor and ingredients are really delicious. This recipe makes about 3-4 servings. You can use this Adobo-Style Lion's Mane & Turnip Grounds as a filling for tacos and burritos or a topping for nachos, pizza, or bowls.

Shopping List 

Ingredients

  • 5oz Lion's Mane mushroom, roughly chopped (portabella, shiitake, or white mushroom would also work)
  • 1 cup roughly chopped turnip
  • 1 cup roughly chopped green bell pepper
  • 1 cup cooked lentils
  • 1 Tbsp adobo bouillon OR vegetable bouillon
  • 3-4 cloves roasted garlic
  • 2 Tbsp avocado oil, divided
  • 1 cup copped onion
  • 1 tsp chili powder
  • to taste salt & pepper

Directions

  • Roast garlic
  • Add Lion's Mane, turnip, bell pepper, cooked lentils, adobo bouillon, roasted garlic, 1 Tbsp avocado oil, and salt & pepper to a food processor and pulse until well combined but not too small
  • SautĂ© diced onions in remaining avocado oil for 3 -5 minutes
  • Add Lion's Mane and turnip crumbles to the pan and cook on med-low for 15 -17 minutes or until vegetables are tender. Cook the water out. Stir frequently to prevent sticking
  • Season the "ground meat" with chili powder and salt & pepper to taste
