The Perfect Walnut Meat
I tried many versions of walnut meat in my 7 years of eating plant-based, and the one complaint I always get from viewers is, "the walnuts don't get soft". Well, the solution for that problem is simple. A pressure cooker. For this Perfect Walnut Meat Recipe, a pressure cooker is vital. I use an Instant Pot. I kept this recipe "unseasoned" so that you can season how you wish, depending on how you want to use the meat.

Ingredients
2 cups raw walnuts (see step 1)
1 red bell pepper
1/2 of an onion
3 Tbsp avocado oil
1 Tbsp + 1.5 tsp concentrated vegetable broth paste
2 Tbsp water
2-3 Tbsp tomato sauce
Directions
- Rinse, then soak walnuts in water for 4-8 hours. Strain and rinse again. Place to the side*
- Roughly chop red bell pepper and onion. Place in a food processor with walnuts, in this order: red bell pepper, onion, walnuts. Pulse until ground to desired texture. Don’t over process
- Add avocado oil, vegetable broth paste, water, tomato sauce, and walnut mixture to a pressure cooker. Cook on high pressure cook mode for 20 minutes
- Allow to cool slightly before serving
- You can season this walnut meat however you like to match the dish you're serving
*You can skip this step, but it helps make the walnuts more digestible
