Slow Cooker Pecan Carrot Grounds
Give yourself some time for this recipe and you will not regret it! This recipe takes time, but it doesn't take much effort. You can essentially set it and forget it. Get this started at night and you will wake up to a delicious plant-based meat alternative in the morning. I specifically didn't season this "meat", because I wanted to give you the freedom to incorporate it into any dish. Be creative and enjoy!

Ingredients
- 2 cups pecans (soaked overnight)
- 1 green bell pepper
- 1 orange bell pepper
- 3 carrots
- 1/2 onion
- 3 Tbsp vegan butter
- 2 Tbsp vegetable bouillon (Better Than Bouillon is a great option)
Directions
- Soak pecans overnight or for up to 24 hours
- Drain pecans and pulse in a food processor
- Chop bell peppers, carrots, and onion
- Add pecans, bell peppers, carrots, onion, vegan butter, and vegetable bouillon to slow-cooker. You do not need to add any liquid
- Cook mixture on high for 1 hour. Lower temperature to warm and slow cook for 12-14 hours, or until pecans and vegetables are soft. TIP: Start this before you go to bed
- Season the grounds as you wish. You can incorporate this into any dish that you would otherwise use grounds for.
