Raw Kale Salad with Tahini Cashew Sauce
I finally figured out the secret to perfect kale is to give it a massage with a bit of olive oil, salt, and lemon juice. Whoever said, don't play with your food, didn't have nearly as much fun as us. I hope you enjoy this simple salad, made with a tangy, umami sauce.

Shopping List
Ingredients
- 1 bunch kale
- extra virgin olive oil (first, cold-pressed)
- lemon juice
- salt
Tahini Cashew Sauce
- 1.5 cups raw cashews (soak 1-2 hours)
- 1 cup water
- juice of 2 lemons
- 2 Tbsp raw tahini
- 2-3 cloves garlic
- 1/4 cup chopped onion
- 4 deseeded dates (soak 1-2 hours)
- 1 tsp dried parsley
- to taste salt & pepper
Additional Ingredients
- 2 mini red sweet peppers, chopped
- 2 mini orange sweet peppers, chopped
- 1/2 yellow bell pepper, chopped
- 1/4 red onion, chopped
- 2 Tbsp sun-dried tomatoes, chopped
Directions
- Combine all Tahini Cashew Sauce ingredients in a blender. Blend until smooth. Set aside
- Wash and dry kale. Chop kale into bite-sized pieces and place into a large bowl. Drizzle with olive oil, the juice from half of a lemon, and sprinkle with salt. Massage kale with hands for a few minutes
- Chop additional salad ingredients
- Build salad in the large bowl by combining the massaged kale, cashew sauce, and additional ingredients.
