Jackfruit Chick’n
- 1 x 14 oz can young green jackfruit
- 1 Tbsp lemon juice
- 1/4 cup coconut amino
- 2 Tbsp extra virgin olive oil (first, cold-pressed)
- 2 tsp raw agave syrup
- 1.5 tsp salt-free garlic herb seasoning blend
- salt & pepper to taste
Walnut Bac’n Bits
- 1 cup raw walnuts (soak 4-6 hours)
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp chili powder
- 2 Tbsp coconut amino
- 2 tsp raw agave (optional)
- salt to taste
Directions
- Strain and rinse jackfruit, then press out water
- Combine all Jackfruit Chick’n ingredients and allow jackfruit to marinate for at least 2 hours
- Dehydrate jackfruit at 110 degrees Fahrenheit for 5-6 hours
- Add all Walnut Bac’n Bits ingredients to a food processor and pulse 2-3 times. You want a bac’n bit texture
- Build salad with sprouts, What’s the Dilly Ranch, avocado, red bell pepper, corn, pumpkin seeds, Jackfruit Chick’n, and Walnut Bac’n Bits. Enjoy!
