Pink Guava Coconut Water
I have been looking for pink guava for so long and surprisingly, I couldn't even find them in Costa Rica. Fortunately, I came across these at a local farmers market in San Diego, CA, and wow do they smell and taste amazing. Pink Guavas have some pretty hard seeds, so be careful with these if you eat the fruit whole. Your dentist will thank you.

Ingredients
- 2-3 ripe pink guava
- 1 tsp freshly grated ginger
- 2 cups water
- 2 Tbsp maple syrup
- juice of 1 coconut
- splash of fresh lime juice
Directions
- Wash and peel pink guavas and ginger
- Grate about 1 tsp of ginger + more if you would like to add it as a garnish
- Blend pink guava, ginger, water, and maple syrup until combined. TIP: Guava seeds are very hard. No need to blend them down. It is best to strain off the juice and discard of the seeds
- Strain the juice into a glass, using a fine mesh stainless steel strainer
- Combine guava juice mixture, coconut water (about 1 cup), and a splash of lime juice. Serve over ice, if preferred. Garnish with shredded ginger and/or shredded coconut.
Makes about 2 x 12-16oz servings
