Chia Pudding
Aside from oatmeal, this has to be one of the easiest breakfast foods to prepare for those of us with a busy schedule. Just make this the night before, or meal prep for the week, and your breakfast will be waiting for you when you wake up. You can be creative with Chia Pudding. Top with your favorite fruits, nuts, seeds, coconut shavings, or nut butters. I added the base recipe here, but feel free to modify as you please.

Shopping List
Ingredients
- 1 cup oat milk (or plant-based milk of choice)
- 3 Tbsp chia seeds
- 1/4 tsp ground cinnamon
- pinch of salt
Garnish Ingredients
- strawberries
- blueberries
- raspberries
Directions
- In a bowl or glass, mix together plant-based milk, chia seeds, cinnamon, and salt
- Place in the refrigerator at least overnight
- Top with your favorite fruits, nuts, seeds, nut butters, and/or coconut shavings. I love this pudding with strawberries, raspberries, and blueberries
