Walnut Sausage Supreme Pizza

This pizza recipe is from my 2nd e-book, "It's All About the Walnuts". I didn't include recipe for the dough, because this recipe is more about the walnut grounds, but feel free to make your own dough, purchase a premade fresh dough, or use flatbread. If you have the time and the ingredients, you could add my Lion's Mane Pepperoni as an additional topping.

Shopping List 

Walnut Grounds Ingredients

  • 2 cups shelled raw walnuts
  • 1/2 cup cauliflower, roughly chopped
  • 1 Tbsp olive oil
  • 1/2 cup white onion, chopped
  • 1 Tbsp minced garlic
  • 2 tsp dried parsley
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1/2 tsp dried fennel seeds
  • 1 tsp smoked paprika
  • 1 tsp red pepper flakes
  • 1.5 tsp salt
  • 1 tsp tomato paste
  • 1/4 vegetable broth

Additional Ingredients

  • pizza crust OR flatbread
  • pizza sauce
  • sliced black olives
  • chopped OR sliced green bell pepper
  • chopped OR sliced red onion
  • shredded vegan mozzarella cheese
  • vegan pepperoni (optional)

Directions

  • Soak walnuts for at least 2 hours in hot water (or overnight in the refrigerator), then drain
  • Preheat oven & pizza steel to 425 degrees Fahrenheit
  • Prepare pizza dough, if making from scratch. Set premade pizza dough out, to room temp
  • Place walnuts and cauliflower into food processor. Pulse until crumble-like texture
  • Warm olive oil in sauté pan to medium heat. Add onion and minced garlic to pan. Cook until lightly browned
  • Add walnut grounds, parsley, Italian seasoning, black pepper, fennel, smoked paprika, red pepper flakes, salt, tomato paste, and veggie broth to pan. Cook until lightly browned & most liquid cooked out
  • While grounds are cooking, roll out pizza dough & prep additional ingredients
  • Build/top pizza as you please. Bake until cheese is melted and crust is preferred crispiness.
