Walnut Bulgogi

This recipe was one of my first viral videos and it does not miss! I put this in my 2nd e-book, "It's All About the Walnuts". It is packed with flavor and can be served over rice or in a burrito. Be sure to also check out my recipe for Spicy Walnut Burrito. It is Bulgogi style as well. Enjoy!

Shopping List 

Walnut Grounds Ingredients

  • 2 cups shelled raw walnuts
  • 1/2 cup cauliflower, roughly chopped
  • 1 Tbsp olive oil
  • 1 cup chopped white onion
  • 4 cloves garlic, minced
  • 2 Tbsp finely chopped ginger
  • 1/3 cup brown sugar
  • 1 Tbsp sesame oil
  • 1 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1/4 cup soy sauce OR liquid amino

Additional Ingredients

  • jasmine rice, cooked
  • sesame seeds
  • thinly sliced green onion

Directions

  • Soak walnuts for at least 2 hours in hot water (or overnight in the refrigerator), then drain
  • Place walnuts and chopped cauliflower into food processor. Pulse until crumble-like texture
  • Warm olive oil in sauté pan to medium heat. Add onion to pan. Cook until lightly browned
  • Add garlic and walnut grounds to pan. Cook for additional 4-5 minutes
  • Add ginger, brown sugar, sesame oil, red chili flakes, black pepper, and soy sauce to pan. Cook mixture until browned
  • Serve on top of jasmine rice. Sprinkle with sesame seeds and green onions.
