Chili Crisp Oyster Mushroom Bites
I love chili crisp so much! It has become a staple in a lot of my recipes. It is also called chili crunch. I am sure this can be made at home, but you can purchase a version of this by brands such as Trader Joe's, Momofuku, and Fly By Jing. I have even found store brand versions of chili crisp at chain grocery stores like Ralphs and Vons. Paired with the crispy oyster mushrooms, you are in for a flavorful treat! This recipe calls for chili crisp to taste, so you'll have to gauge your preferred spice level. You could also leave the chili crisp out of the wet batter and use it as a sauce after frying the mushrooms.

Ingredients
- 24 oyster mushroom caps
- grapeseed oil for frying
Wet Batter
- 1 cup spelt flour
- 1.5 cups sparkling water
- 1 tsp minced garlic
- 2 tsp minced onion
- 1/2 tsp chili powder
- to taste chili crisp oil
Dry Batter
- 1/2 cup spelt flour
- 1/2 cup cornstarch or rice flour
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp Italian seasoning
- to taste salt & pepper
Directions
- Clean oyster mushrooms with a brush, if needed. Remove stems, if preferred
- Heat frying oil to 350-375 degrees Fahrenheit
- Mix together wet batter ingredients
- Mix together dry batter ingredients
- Dip mushrooms into wet batter then into dry batter
- Fry until golden crispy and enjoy while hot!
