Jerk Jackfruit & Roasted Potato Pockets

Potato Ingredients
- 2 med-large potatoes, chopped
- avocado oil spray
- 1/4 tsp Trader Joe's Italian Soffrittos seasoning OR Italian seasoning
- 1 tsp smoked paprika
- to taste salt & pepper

Jerk Jackfruit Ingredients
- 1 scotch bonnet OR habanero pepper deseeded & chopped
- 1 Tbsp brown sugar
- 2 tsp lime juice
- 1/4 cup soy sauce
- 1 Tbsp avocado oil OR olive oil
- 2 Tbsp Jamaican jerk seasoning
- 1 tsp minced garlic
- 1/2 tsp dried parsley
- to taste salt & pepper
- 20oz can green jackfruit
- 1/2 chopped red bell pepper
- 1/2 chopped red onion

Additional Ingredients
- vegan sliced/shredded smoked gouda OR cheddar cheese
- premade or from scratch pizza dough
- jerk sauce OR marinade (can usually find in "sauce" aisle)

Directions
- Chop potatoes, lightly spray with avocado oil, season with Soffrittos OR Italian seasoning, paprika, and salt & pepper. Roast potatoes until crispy (air-fry recommended, but could also bake). Set to the side.
- Add deseeded and chopped scotch bonnet pepper OR habanero pepper, brown sugar, lime juice, soy sauce, avocado oil, Jamaican jerk seasoning, garlic, parsley, and salt & pepper to a blender. Blend until very smoothÂ
- Break down the green jackfruit into pieces that resemble shredded meat. Remove any seeds that may remain. Marinate the jackfruit in jerk sauce from Step 2 for at least 1 hour
- Oil and heat sautĂ© pan to med-high heat. Add red bell pepper and red onion to sautĂ© pan and cook for 2-3 minutes. Add marinated jackfruit to the pan and cook for an additional 10 minutes or until browned.Â
- Preheat oven to 400 degrees FahrenheitÂ
- Roll out pizza dough and cut into 6-8 inch circles
- Place the bottom dough on parchment paper, inside of your baking dish. Add a scoop of roasted potatoes, a slice of smoked gouda OR cheddar cheese, and a scoop of jackfruit mixture to the pizza dough. Cover the filling with another layer of pizza dough. Crimp the edges of the dough to seal with a little water. Lightly spray with vegan butter or oil and bake for 18-20Â minutes or until lightly browned and crispy
- Serve pockets with jerk sauce or marinade
