Roasted Poblano Garlic Mashed Potatoes
We first made this recipe for a holiday RV trip, so we used the campfire to roast the garlic and peppers, and WOW, the flavor was incredible! Fortunately, you don't need to use fire to make this delicious recipe.

Ingredients
- 8 small red potatoes
- 3 poblano peppers
- 1 bulb garlic
- 2 Tbsp vegan butter
- 1/4 cup unsweetened plant-based milk
- 1/2 tsp rubbed sage
- 2 tsp Italian seasoning
- to taste salt & pepper
Directions
- Peel and boil potatoes, until soft to a fork
- Roast poblano peppers and garlic. TIP: To roast garlic, chop off the top of the bulb, exposing a small amount of the garlic cloves. Drizzle with olive oil and sprinkle with salt
- Chop the poblano peppers (peel skin off, if preferred)
- Mash potatoes then mix in poblano peppers, roasted garlic, butter, plant-based milk, sage, Italian seasoning, and salt.
