Carrot Harissa Jackfruit Pizza
The pizza was fun to make and the harissa adds a burst of flavor. For this recipe, I used a premade chickpea pizza crust, but you can absolutely make your own dough.

Ingredients
- 8-10 small chopped carrots
- 1 x 20oz can green jackfruit
- avocado oil
- 1 Tbsp harissa paste
- 2 Tbsp + 2 tsp olive oil
- 1 tsp granulated garlic
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black pepper
- 1/4 cup vegetable broth
- pizza crust
- vegan mozzarella shreds

Garnish Ingredients
- fresh cilantro

Directions
- Preheat oven to 350 degrees FahrenheitÂ
- Peel and roughly chop carrots. Boil for 25 minutes
- While carrots are boiling, prepare the jackfruit. Remove seeds, break it down into smaller pieces, and lightly coat with avocado oil, and salt & pepper to taste. Bake on a baking sheet until edges are crispy
- Add carrots, harissa paste, olive oil, granulated garlic, onion powder, salt, and black pepper to a food processor and blend. Add vegetable broth to help blend the carrots to a smooth texture
- Build the pizza with carrot harissa sauce, jackfruit, and vegan mozzarella. Bake until cheese is melted and crust is crispy. Garnish with fresh cilantro before serving
