Kenyan Chick'n Curry
If you don't know by now, curry is one of my favorite dishes. Curry is exploding with flavor and I find it very comforting to eat. I can't handle eating anything too spicy, so I went light on the serrano pepper for this recipe, but feel free to adjust if you like the burn. Don't rush this recipe. The longer this simmers, the better.

Ingredients
- 2 tsp finely chopped fresh ginger
- 1 Tbsp + 1 tsp finely chopped garlic
- 1 chopped red onion
- 1 Tbsp olive oil
- 1 x 14.5oz can diced tomatoes (fire roasted, if preferred)
- 1/4 cup tomato paste
- 4 cups vegetable broth
- 2 Tbsp smoked paprika
- 2 tsp curry powder
- 1/2 (or more) deseeded, finely chopped serrano pepper
- 1 Tbsp chili oil
- to taste salt & pepper
- 1/4 cup vegan cream cheese
- 8oz vegan chicken OR diced tofu
Garnish Ingredients
- fresh cilantro

Directions
- SautĂ©Â ginger, garlic, and onions in olive oil for about 5 minutesÂ
- To the pan, add diced tomatoes, tomato paste, vegetable broth, smoked paprika, curry powder, serrano pepper, chili oil, and salt & pepper. Simmer for 10-12 minutes
- To the pan, add vegan cream cheese and stir until combined
- To the pan, add vegan chicken or tofu and simmer for at least 10-15 minutes
- Serve with rice and garnish with cilantro
