Bang Bang Skewers

It is grilling season! Put your hand where my eyes can see if you are excited about grilling in the summer sun! Mushrooms are great for grilling, and why not throw some Lion's Mane on the grill? If you can't access Lion's Mane, you can make this recipe using everyday mushrooms like button mushrooms. I rubbed these skewers down with some chili oil and took them to the next level. The mixture of sweet, savory, and spice all in one bite was an explosion!

Shopping List 

Skewers

  • 1/2 pound Lion's Mane OR preferred mushrooms
  • wood OR metal skewers
  • red bell pepper
  • green bell pepper
  • red onion
  • pineapple
  • chili oil
  • salt
  • pepper
  • garlic powder

Bang Bang Sauce

  • 1/2 cup vegan mayonaisse
  • 2 Tbsp sriracha sauce
  • 3 Tbsp sweet chili garlic sauce
  • 1 Tbsp chili oil

Directions

  • If you are using wood skewers, soak them in water while you prepare the other ingredients
  • Clean the Lion's Mane or other mushrooms with a soft brush, if needed. Chop the Lion's Mane into cubes. If you are using button mushrooms, you can leave them whole
  • Create the Bang Bang Sauce by mixing all the ingredients in a small bowl
  • In a large bowl, combine the Bang Bang Sauce with the mushrooms. Allow the mushrooms to marinate for 1 hour. TIP: Save some of the Bang Bang Sauce for dipping!
  • Chop up some red bell pepper, green bell pepper, red onion, and pineapple
  • Preheat the grill and make the skewers by adding some of each vegetable and some mushrooms
  • Coat the skewers with a drizzle of chili oil, salt, pepper, and garlic powder
  • Grill on medium heat for 4-5 minutes on each side, turning the skewers 3-4 times
  • Rub more of the Bang Bang Sauce on the mushrooms or use the extra sauce as a dip.
