Lion's Mane No-Fish Sticks

This bonus recipe from my "It's All About the Lion's Mane" e-book is easy to make, but it does take a little time, since the no-fish sticks need to freeze overnight, but they are worth the wait! The spicy tartar sauce is a fire addition to the recipe. Enjoy!

Shopping List 

No-Fish Sticks

  • 5oz Lion's Mane mushroom
  • 20oz can young green jackfruit
  • 2 Tbsp miso paste
  • 3 Tbsp vegan liquid egg
  • 1 sheet nori
  • 1 tsp Old Bay seasoning

Wet Batter

  • 1 cup flour
  • 1 & 1/4 cups water
  • 1 tsp Old Bay seasoning
  • 1 tsp onion powder

Dry Batter

  • 1 cup panko bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika

Spicy Tartar Sauce

  • 1.5 cups vegan mayonnaise
  • 1 Tbsp finely chopped red onion
  • 1 Tbsp pickle relish
  • 1 tsp cayenne pepper

Additional Ingredients

  • lemon wedges
  • fries
  • grape seed oil to fry

Directions

TIP: These no-fish sticks need to freeze overnight, so prep them the day before you wish to eat them

  • Pull apart Lion’s Mane into one inch sized pieces
  • Drain jackfruit and lightly press with clean towel to remove excess liquid
  • Add Lion's Mane, jackfruit, miso, vegan egg, nori, and Old Bay to food processor
  • Pulse until well blended but not mushy (want mixture to look flaky)
  • On parchment paper, create fish stick shaped pieces with mixture
  • Freeze sticks overnight
  • Create wet batter
  • Create dry batter
  • Heat frying oil to 370 degrees Fahrenheit (can air-fry if preferred)
  • Mix together ingredients for Spicy Tartar Sauce
  • Dip no-fish sticks into wet batter & then into dry batter
  • Fry or Air-Fry no-fish sticks until golden & crispy. Serve with lemon wedges and fries.
