Raw Jicama Noodles

Recently, I have been incorporating new foods into my diet and one of those foods is jicama. Long gone are the days of only eating jicama with a dash of tajin. We have elevated this root veggie to new heights with these mango cashew sauced noodles. The fact that this dish is also raw vegan is just a bonus. Hope you enjoy!

Shopping List 

Ingredients

  • 1 large jicama
  • 2 tsp lime juice
  • pinch of salt

Mango Cashew Sauce

  • 1 cup raw cashews (soak 1-2 hours)
  • 2/3 cup spring water
  • 1 mango, roughly chopped
  • 2 Tbsp raw hemp seeds
  • 1 Tbsp raw agave
  • 1 Tbsp lime juice
  • 1/4 cup onion, diced
  • small handful fresh cilantro
  • 3 tsp red pepper flakes
  • to taste salt & pepper

Additional Ingredients

  • sun-dried tomatoes, chopped
  • sprouted mixed seeds (optional)

Garnish Ingredients

  • fresh cilantro
  • red pepper flakes

Directions

  • Clean and peel the jicama *this is a critical step - remove all of the skin*. Add to a spiralizer and create noodles. Place in a large bowl and coat with lime juice and a pinch of salt
  • Add all the ingredients for the Mango Cashew Sauce to a blender. Blend until smooth. Pour over noodles and stir to coat
  • Enjoy noodles with sun-dried tomatoes, sprouted mixed seeds (Go Raw brand is good), cilantro, and red pepper flakes.
