Raw Jicama Noodles
Recently, I have been incorporating new foods into my diet and one of those foods is jicama. Long gone are the days of only eating jicama with a dash of tajin. We have elevated this root veggie to new heights with these mango cashew sauced noodles. The fact that this dish is also raw vegan is just a bonus. Hope you enjoy!

Shopping List
Ingredients
- 1 large jicama
- 2 tsp lime juice
- pinch of salt
Mango Cashew Sauce
- 1 cup raw cashews (soak 1-2 hours)
- 2/3 cup spring water
- 1 mango, roughly chopped
- 2 Tbsp raw hemp seeds
- 1 Tbsp raw agave
- 1 Tbsp lime juice
- 1/4 cup onion, diced
- small handful fresh cilantro
- 3 tsp red pepper flakes
- to taste salt & pepper
Additional Ingredients
- sun-dried tomatoes, chopped
- sprouted mixed seeds (optional)
Garnish Ingredients
- fresh cilantro
- red pepper flakes
Directions
- Clean and peel the jicama *this is a critical step - remove all of the skin*. Add to a spiralizer and create noodles. Place in a large bowl and coat with lime juice and a pinch of salt
- Add all the ingredients for the Mango Cashew Sauce to a blender. Blend until smooth. Pour over noodles and stir to coat
- Enjoy noodles with sun-dried tomatoes, sprouted mixed seeds (Go Raw brand is good), cilantro, and red pepper flakes.
