Red Curry Pasta w/ Jerk Jackfruit
One of my favorite quick dinner recipes is Rasta Pasta. This is a play on Rasta Pasta, made with red curry. It is such a great remix recipe and it reheats well, if you want to meal prep it for the week ahead.

Ingredients
- 1 x 20oz can green young jackfruit
- 1 Tbsp fresh minced garlic
- avocado oil
- 1 Tbsp + 1.5 tsp jerk seasoning
- to taste salt & pepper
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 1 chopped orange bell pepper
- 4 cups pasta noodles
- 1/4 tsp thyme
- 1 can coconut cream
- 4oz vegan cream cheese
- 2 tsp red curry powder

Directions
- Prepare the jackfruit. Drain the liquid. Remove seeds. Break down the jackfruit into smaller pieces
- Sauté minced garlic in avocado oil for 1-2 minutes. Add jackfruit, 1.5 tsp jerk seasoning, and salt & pepper to taste. Cook 6-8 minutes on medium heat, until the jackfruit browns slightly and has a little crisp. Place to the side
- Sauté red bell pepper, green bell pepper, and orange bell pepper in avocado oil for 2-3 minutes on medium heat
- Start boiling pasta while you finish the sauce
- To the peppers, add 1 Tbsp jerk seasoning, thyme, and salt & pepper to taste. Cook for additional 3-4 minutes on medium heat
- To the peppers, add coconut cream, cream cheese, and red curry. Cook for additional 5 minutes on medium heat
- Drain pasta and add cooked pasta and jackfruit to the creamy pepper mixture. Cook for 2-3 minutes on medium heat
