Mushroom Cheesesteak Sandwich
I love food that is flavorful and has the right texture. I also love creating mushroom meat to use in many different ways. Even when I am out camping, I still can make something delicious, like this Mushroom Cheesesteak Sando. I took the recipe for my Mushroom Roast Beef and changed a few things. I used Shimeji mushrooms instead of Baby Bella mushrooms. I chopped up the Roast Beef and cooked it with purple bell peppers and onions. I added some vegan provolone cheese and a masterpiece was born.

Mushroom Roast Beef

- sub for harissa sauce/paste OPTIONAL vegan Worcestershire sauce
Garlicky Queso Sauce
- 1 cup raw cashews
- 3/4 cup nutritional yeast
- 3/4 cup unsweetened oat milk
- 1 Tbsp granulated garlic powder
- 1 Tbsp granulated onion powder
- 1 tsp salt
Additional Ingredients
- preferred cooking oil
- sliced white onion
- sliced purple bell pepper (or any color bell pepper)
- 2 Tbsp vegan Worcestershire sauce
- vegan provolone cheese
- hoagie rolls
- OPTIONAL vegan mayonnaise
Directions
- See other recipe for Mushroom Roast Beef. Follow those instructions, replacing the Baby Bella mushrooms with Shimeji (Beech) mushrooms, if preferred. You can also swap the harissa sauce/paste out for vegan Worcestershire sauce for more "steak" flavor
- While you wait on the Roast Beef to steam, blend together all ingredients for Garlicky Queso Sauce and set aside, covered. TIP: This Garlicky Queso recipe can be used as a base recipe for most "cheese" sauces. You can add other flavors like jalapeno, green chilies, salsa, chipotle peppers, soyrizo...etc
- Once the Roast Beef is steamed and cooled, chop up enough of it to make as many Cheesesteak Sandwiches as you need. Set aside
- In a pan, on medium-high heat, saute sliced onions and bell pepper in preferred cooking oil for 4-5 minutes
- Add chopped Mushroom Roast Beef to the pan and cook for an additional 3-4 minutes. Add 2 Tbsp of Worcestershire sauce and black pepper to taste
- Reduce heat of pan to medium-low. Add 2-3 slices of vegan provolone cheese to the pan and mix until it's melted. This helps the Mushroom Cheesesteak stick together
- Toast your hoagie rolls, if preferred
- Build your sandwich with the Mushroom Cheesesteak mix and Garlicky Queso. You can also add vegan mayonnaise and/or fresh chopped bell peppers.
