Loaded Burrito w/ Walnut Grounds

Walnut Grounds Ingredients
- 2 cups shelled raw walnuts
- 1/4 cup lentils (per burrito)
- 3 Tbsp (1oz packet) taco seasoning
- 1/4-1/2 red onion, roughly chopped
- 2-4 sun-dried tomatoes
- 2 mini bell peppers, roughly chopped
- 2 Tbsp chili oil
Buffalo Aioli
- 1/2 cup vegan mayonnaise
- 2-4 Tbsp buffalo sauce
Additional Ingredients
- brown rice OR preferred rice
- guacamole
- 1 can cannellini beans
- burrito shells
Directions
- Soak walnuts for at least 2 hours in hot water (or overnight in the refrigerator), then drain
- Boil lentils, if using dried. Rinse and drain, if using canned
- Cook rice and set aside
- Drain & rinse cannellini beans, set aside
- Place walnuts, lentils, taco seasoning, red onion, sun-dried tomatoes, mini bell peppers, and 1 Tbsp of chili oil into food processor. Pulse until crumble-like texture
- Warm remaining chili oil in sauté pan to medium heat. Add walnut grounds to pan and cook until browned
- While grounds are cooking, whisk together mayo and buffalo sauce for aioli
- Warm burrito shells and get ready to wrap!
- Fill burrito with brown rice, guacamole, cannellini beans, walnut grounds, and buffalo aioli. Wrap it up and Enjoy!
