Stuffed Lion's Mane Burrito w/ Avocado Lime Sauce
I can almost guarantee I said this already in another Recipe Club recipe, but I rock with burritos! This burrito is delicious and if you are looking for more burrito inspiration, you can find at least 3 other bangers in the Club. Hope you enjoy wrapping your meal in a tortilla shell as much as I do!

Shopping List
Lion's Mane Crumbles
- 1 pound Lion's Mane mushroom
- 1/4 cup chopped onion
- 1/4 cup chopped cilantro
- 2 Tbsp vegan Worcestershire sauce
- 2 Tbsp chili oil
- 1 Tbsp steak OR taco seasoning
- 1 Tbsp tapioca starch
- to taste salt & pepper
Avocado Lime Sauce
- 1 ripe avocado
- 1 cup vegan mayonnaise
- 1/2 tsp smoked paprika
- 3 Tbsp lime juice
- 1 jalapeno
Additional Ingredients
- burrito shells
- 2-3 cups cooked brown rice
- 1 can cannellini OR navy beans
- 1-2 cups shredded purple cabbage
Directions
- Pull apart Lion's Mane into small pieces that resemble shredded meat
- Add Lion's Mane to a grill/sauté pan with a pinch of salt & pepper
- Cook on low for 10-15 minutes to release all of the water
- Add Lion's Mane, onions, cilantro, Worcestershire sauce, chili oil, steak/taco seasoning, and salt & pepper to a food processor. Pulse for 30 seconds *Do not over blend*
- Cook Lion's Mane crumbles in the same grill pan, with a drizzle of olive oil, until lightly browned
- Blend together ingredients for Avocado Lime Sauce (using food processor or blender)
- Prepare brown rice and drain & rinse beans
- Build the burrito with the ingredients you prefer.
