Lion's Mane Loaded Nachos
I love nachos as a go-to quick meal and these do not disappoint. This recipe was originally a collaboration with Mylkdog Notcho Cheez, but you can use any vegan cheese you prefer. I have a cashew chipotle nacho cheese recipe that would go well with these nachos. You can find that recipe under Loaded Waffle Fries w/ Chipotle Cheese Sauce.

Ingredients
- 1/2 pound Lion's Mane mushroom
- 1 tsp avocado OR olive oil
- 2 tsp cumin
- 2 tsp chili powder
- 1/4 cup chopped cilantro
- 1 Tbsp lime juice
- 1/3 cup orange juice
- 4 cloves garlic, crushed
- 3 Tbsp vegan Worcestershire sauce
- few drops liquid smoke
- 1 tsp coconut amino
- to taste salt & pepper

Garnish Ingredients
- tortilla chips
- vegan nacho cheese OR melted cheddar
- sliced jalapeƱos
- diced tomatoes
- chopped green onions
- vegan sour cream
- chopped cilantro
- guacamole

Directions
- Pull apart Lion's Mane into small pieces that resemble shredded meat
- In a cast iron pan, without oil, cook shredded Lion's Mane to remove the water. To do this, use a cast iron press or heavy pot. Press and flip the mushroom meat until no water comes out. It is OK if the Lion's Mane gets a little browned
- In a bowl, mix oil (avocado or olive), cumin, chili powder, cilantro, lime juice, orange juice, garlic, Worcestershire sauce, liquid smoke, coconut amino, and salt & pepper to tasteĀ
- Marinate Lion's Mane in the sauce. The longer it marinates, the better.Ā
- Drain the marinade
- Cook the Lion's Mane on the stovetop, using a grill pan or cast iron pan - Cook until tender and browned
- Stack up your nacho plate how you please and enjoy!
