Creole Style Red Beans & Rice

I love remaking southern classics with a vegan twist and this simple red beans and rice does not disappoint. If you are from New Orleans, don't be too hard on me. I've never had the pleasure of trying New Orleans Red Beans & Rice.

Shopping List 

Ingredients

  • 1 pack vegan chipotle sausages
  • 1 Tbsp cooking oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1 Tbsp creole OR cajun seasoning
  • 1.5 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/2-1 tsp cayenne pepper
  • 4 x 15oz cns red beans
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 4 cups vegetable broth
  • to taste salt & pepper

Additional Ingredients

  • white OR brown rice, prepared to package instructions
  • hot sauce

Directions

  • Chop sausages and sauté in a small amount of cooking oil for 4-5 minutes. TIP: Field Roast has a good option for store bought vegan chipotle sausage
  • Remove sausages from pan and set aside in a bowl
  • In the same pan, sauté onions, green peppers, and celery
  • Add creole seasoning, Italian seasoning, smoked paprika, and cayenne pepper to the pan and cook for 2-3 minutes. Remove from heat and place veggies to the side
  • Add red beans, bay leaf, thyme, and vegetable broth to a pot. Cook until it starts to boil. Smash the red beans slightly with a potato smasher
  • Add sausages and veggies to the pot of beans. Salt & pepper to taste
  • Serve on top of cooked rice and don't forget the hot sauce!
