Raw Cheezy Sauce or Dip

I love to eat raw, plant-based foods when I need a reset. Last week, I took a few days to eat raw and enjoy foods like this Mediterranean Wrap. The star of this recipe is the pumpkin seeds! They have more protein than most nuts and seeds and are in season.

Eating raw vegan does not have to be boring. Yes, it takes time and planning, but with time, you can master ways to prepare in bulk to save time. When you are mindful, you are fully aware and present in the moment, not distracted by thoughts of the past or future, and focused on the now. It's about paying attention, on purpose, to your thoughts, feelings, bodily sensations, and the food you are putting into your body without judgment. Recently, I have been incorporating new foods into my diet and one of those foods is jicama. Long gone are the days of only eating jicama with a dash of tajin. We have elevated this root veggie to new heights with these mango cashew sauced noodles. The fact that this dish is also raw vegan is just a bonus. Hope you enjoy!
